You will need:

Method

  1. Chop the peppers
  2. Chop the onion, fry this in a little oil until soft.
  3. While you onion is frying, chop off the top of the chilli, cut in half length ways and scrape out the seeds. Throw the seeds and the top of the chilli away. Then chop the rest of the chilli into small slices and add this to the onion.
  4. Now wash your hands and whatever you do don't poke yourself in the eye with chilli-fingers it will hurt!
  5. Add the mince to the onion and fry this off until all of the mince is brown. Add the chopped tomatoes, tomato purree and vegi stock cube. Add the peppers and beans and simmer for 20 minutes. Add salt and pepper to taste.

You can now serve this chilli with rice, jacket potatoes, tortillas or tacos as you wish.
